Comment est-ce possible\u00a0? \u00ab\u00a0En achetant, en g\u00e9rant les stocks et en produisant intelligemment\u00a0\u00bb, r\u00e9pond Arnold Vanhecke, collaborateur du service Catering. \u00ab\u00a0Apr\u00e8s un processus d\u2019apprentissage long et intensif, je suis fier de pouvoir dire que nous sommes l\u00e0 o\u00f9 nous voulons \u00eatre. L\u2019AZ Groeninge est le r\u00e9sultat d\u2019une fusion entre quatre h\u00f4pitaux. Au d\u00e9but, le nouvel h\u00f4pital n\u2019achetait que des plats pr\u00e9par\u00e9s aupr\u00e8s d\u2019un traiteur externe et il n\u2019y avait m\u00eame pas de cuisine centrale. Les patients choisissaient donc parmi un menu limit\u00e9 et les assiettes \u00e9taient r\u00e9chauff\u00e9es dans chaque service. Arnold Vanhecke : \u00ab\u00a0Du point de vue op\u00e9rationnel, c\u2019\u00e9tait un bon syst\u00e8me, mais au bout d\u2019un certain temps, nous avons d\u00e9cid\u00e9 de prendre la restauration en main. Ce fut un incroyable processus d\u2019apprentissage\u00a0: du choix des fournisseurs et des produits \u00e0 la logistique, en passant par la recherche des bonnes saveurs et des bonnes recettes. Arnold Vanhecke : \u00ab En 2020, nous avons inaugur\u00e9 notre nouvelle cuisine centrale. Cela a ouvert la perspective de refaire certains plats en interne. Nous nous sommes alors demand\u00e9 comment nous pouvions faire encore mieux. Pour cela, nous nous sommes tourn\u00e9s vers Gault&Millau. Vous connaissez peut-\u00eatre l\u2019entreprise pour ses critiques de restaurants. L\u2019un des th\u00e8mes \u00e9tait par exemple les sauces. Nos chefs ont pr\u00e9par\u00e9 35\u00a0sauces diff\u00e9rentes. Gault&Millau a \u00e9tabli un top\u00a05 des meilleures sauces, ajust\u00e9 les recettes de certaines autres sauces et supprim\u00e9 ce qui n\u2019\u00e9tait pas bon. Des enqu\u00eates ont \u00e9galement \u00e9t\u00e9 men\u00e9es aupr\u00e8s des patients et nous avons mang\u00e9 dans la cuisine les m\u00eames repas que nos patients pendant un an. Gr\u00e2ce \u00e0 ces informations, nous avons am\u00e9lior\u00e9 chaque plat. Nous avons une offre standard\u00a0: p\u00e2tes, pommes de terre, riz, pur\u00e9e de pommes de terre, poisson, viande, produits v\u00e9g\u00e9tariens, omelette\u2026 Avec ou sans \u00e9pices. Avec les aliments d\u00e9coup\u00e9s, moulin\u00e9s et mix\u00e9s. Nos patients ont tous ces choix pour composer leur menu du lendemain. L\u2019AZ Groeninge dispose d\u2019une cuisine centrale o\u00f9 sont pr\u00e9par\u00e9s 900\u00a0plats chauds par jour pour les patients et o\u00f9 la vaisselle est lav\u00e9e pour l\u2019ensemble de l\u2019h\u00f4pital. Il y a \u00e9galement 10\u00a0cuisines d\u00e9centralis\u00e9es et un certain nombre de points de d\u00e9p\u00f4t. Ensuite, il y a le Bistro\u00a0: le restaurant pour le personnel et les visiteurs qui sert environ 1\u00a0000\u00a0repas chauds par jour. Entre tous ces points, 130\u00a0chariots de repas et de ravitaillement au sous-sol pour le transport. Arnold Vanhecke : \u00ab\u00a0Nous sommes tr\u00e8s fiers de notre syst\u00e8me de buffet de pain pour le petit-d\u00e9jeuner et le d\u00eener. Il part des cuisines d\u00e9centralis\u00e9es et passe dans toutes les chambres. Le patient d\u00e9cide de ce qu\u2019il veut sur le moment. Pain blanc, gris ou complet. Nombreuses sortes de fromages, charcuterie et salades \u00e0 tartiner. Garnitures sucr\u00e9es allant de la confiture \u00e0 la p\u00e2te de sp\u00e9culoos, en passant par les vermicelles de chocolat et le choco. Yaourt, pudding, fruits frais, c\u00e9r\u00e9ales, etc. Comme nos patients peuvent choisir sur le moment, il y a beaucoup moins d\u2019exc\u00e9dents. Et comme tout est emball\u00e9 individuellement, les aliments se conservent plus longtemps et nous n\u2019avons donc pas \u00e0 jeter grand-chose. Cela est li\u00e9 \u00e0 l\u2019organisation de notre cuisine. Nous avons 3\u00a0\u00e9quipes. La premi\u00e8re \u00e9quipe r\u00e9ceptionne toutes les marchandises. Elle est responsable des stocks et pr\u00e9pare tout pour nos cuisiniers. La deuxi\u00e8me \u00e9quipe, ce sont nos cuisiniers. Notre troisi\u00e8me \u00e9quipe est responsable de l\u2019ensemble de la distribution des repas. Nous avons la chance que la direction soit enti\u00e8rement tourn\u00e9e vers l\u2019innovation et la qualit\u00e9. La nouvelle cuisine, le trajet avec le Gault&Millau, le Green Deal Soins durables\u2026 Ce sont des investissements, bien entendu. Cependant, c\u2019est gr\u00e2ce \u00e0 ces investissements que nous sommes en mesure d\u2019offrir chaque jour des repas de qualit\u00e9 \u00e0 nos patients.\u00a0\u00bb<\/p>

\u00ab\u00a0Nos projets pour l\u2019avenir\u00a0? Nous sommes toujours \u00e0 la recherche de nouveaux produits et de nouvelles recettes pour surprendre nos patients. Nous souhaitons \u00e9largir notre offre de produits v\u00e9g\u00e9tariens. Et nous voulons adapter encore davantage nos menus aux diff\u00e9rents services, comme le service p\u00e9diatrique. Mais pour l\u2019instant, notre plus grand d\u00e9fi est de maintenir le niveau que nous avons atteint. L\u2019\u00e9quipe de cuisine contribue ainsi au trajet de soins de chaque patient.\u00a0\u00bb<\/p>
